Burning down the house
We recently replaced our hood liner above our stove with a more powerful unit that is supposed to push more fumes caused by high heat cooking to the outside. Our old blower was very underpowered and even searing some meat on the stove was problematic.
So on Sunday, we decided to put the new unit to the test. I seared some pepper crusted filet mignons and then added some cognac to flambe the pan to create a pan sauce with cream. the straight sided pan made it hard to ignite the fumes, but once they did light, the flame produced quite a show.
I got this recipe from Alton Brown’s Good Eats show about tenderloin. I bought the full pismo from CostCo and trimmed the meat myself. All in all, a wonderful meal with great entertainment value. I think I will try burning down the house again.
